Vegan Sushi Bowl | Sushi Buddha Bowl Recipe | Healthy Vegetarian Sushi Bowl

For Sushi rice
1 cup sushi rice or any rice of your choice
1 3/4 cup water
4 tbsp rice vinegar or apple cider vinegar
1/2 tsp salt or as per taste
2 tsp sugar
1 tbsp roasted white sesame seeds
1 tbsp roasted black sesame seeds

Add rice and water in a sauce pan and cook on medium heat. Let it cool for 5 minutes while keeping it covered. Add rest of the ingredients, mix gently.

For dressing:-
3 tbsp toasted sesame oil
2 tbsp dark soy sauce
4 tbsp lemon juice
2 tbsp sugar
1 tsp sriracha sauce, optional
2 tbsp roasted black sesame seeds
1/2 cup tahini (sesame paste) or substitute with almond or cashew butter.

Add all the ingredients in a jar and shake it well.
You can also substitute this with teriyaki sauce or any other sauce or dip.

For plating:-
Serve rice with red bell pepper, carrot, cucumber, boiled corn kernels, boiled Edamame beans or sautéed tofu, raddish, purple cabbage, Nori sheets/ sea weeds (optional), avocado, sautéed snap peas (optional). Drizzle some dressing and enjoy!
